Happy Birthday, Mike!
Mike and I have been together for 19 birthdays! Crazy that our first birthday together was his 25 and now we are celebrating his 44th! It’s crazy how much can happen in 19 years… 🙂
We had a fun and busy week, which included plenty of time for celebrating. I walked with Jen on Monday and then the trio had dentist appointments, I had a dentist appointment on Tuesday and the trio had art and Bo trained with Michael. Chip also had his photo taken with Santa Tuesday evening. I’ll share it later this week!
On Wednesday, I met Mandy in Champaign to Christmas shop and Bo and Anna had virtual Scholastic Bowl that evening. We were supposed to end up at swim that day too… but…
Mike had Thursday and Friday off and we’ve been busy wrapping and continuing to prep for Christmas. Everything is purchased and all that is here is wrapped, so we are making good progress.
We had the Hills and McNally’s over for a Mexican Fiesta on Friday evening. It is so nice to actually see people and they have all already had COVID, so it feels pretty safe. We ate, drank, and and played What Do You Meme? (definitely adults only on this one!) and the kids took over the basement. It was nice to feel a bit of normalcy!
Saturday was Mike’s birthday and unfortunately I ended up working for a chunk of it. Clara made Mike’s requested birthday dessert – Oreo cheesecake brownies – all on her own! I stopped working around 3 and we spent the evening together, eating leftover Mexican that I turned into quesadillas and watching Survivor. Not the most entertaining of birthdays, but I promised I’d take him on a trip after Christmas… 😉
Sunday morning, Clara and I listened to Christmas music and wrapped all of Mike’s Christmas gifts. I am a horrible wrapper, so I’ve taken on the role of purchasing and prepping all of the gifts for wrapping and then Mike wraps everything except his own gifts. Clara was a big help and we wrapped in record time! We spent the rest of Sunday relaxing. I made French Silk Pie, we exercised, and just enjoyed reading our books for part of the afternoon. I’m reading Elin Hilderbrand’s Winter Series that always puts me in the Christmas spirit!
Meals from last week…
Monday: Mike picked up HyVee Chinese on his way home from work. We had good plans to make a rice cauliflower fried rice but the day just became hectic.
Tuesday: Tacos – hard shell with beef
Wednesday: Kids and Mike had Jimmy John’s — I had Dos Reales with Mandy in Champaign for a late lunch and wasn’t hungry
Thursday: Frozen pizza — this week just got away from me…
Friday: Mexican Fiesta – I made ground beef taco meat, shredded chicken taco meat, homemade refried beans (I used black beans instead – so good!), Key Lime Pie, lemon cookies, and Mike made BLT guac and a new recipe for margaritas – plus the Hills and McNallys brought goodies to round it all out!
Saturday: Chicken and black bean quesadillas, Oreo cheesecake brownies
Sunday: Ground beef nachos, French Silk Pie
