One Week Down
Well, we made it through the first week of school with in-person classes. That’s further than some schools have made it, so we are counting it as a win! The kids had a good week and even though they only went to school half-days due to the heat, they were glad to be back, even with masks and physical distancing.
Chip and I spent most of the week working and waiting for the trio to come back home. Chip was a big help with work… I took advantage of every opportunity I could when he was sleeping and the house was quiet to get work done. My goal for this week is to actually get caught up! We will see.
I went to Bloomington with a friend and we rode bikes on the Constitution Trail. It was HOT and I made the mistake of eating before we rode, but it was still a lot of fun!
Other highlights of the week included golf practice for Bo and Clara, Art for all three, a trip to Target with Anna and Clara, and a much-needed massage for me!
I had a productive week with work and rewarded myself with an afternoon relaxing in the pool with Clara and Anna on Friday. It was perfect weather and nice to take a break when I would typically be working. Chip likes being the pool boy!
We also made a trip to St. Charles on Saturday to see Mike’s parents. We made stops at Costco and State Street and ate Chick-Fil-A for lunch and brought home Gen Hoe that we saved for Sunday’s lunch.
On Sunday, we washed our cars, which is apparently the new Sunday morning routine, and decorated the house for fall. In the afternoon, we had our second training session with the dog trainer for Chip and Mike went to a friends’ house for a bit while I worked. The trio and I also gave Chip a bath, which was its own adventure.
Overall, not an exciting week, but it was nice to have some normalcy and routine with school! I’m still assuming that school will be shortlived — and plotting and planning travel for when the trio ends up remote. My car has built-in Wifi so the thought of a road trip around the country is appealing! I also think the kids and I will probably end up in Florida and Mexico at some point — as those are my two “go-tos” 🙂
Dinners last week: (inspired by Lag Liv – I love that she includes their meals and I’ve tried so many of her suggestions, so I’m hoping to share our meals with all of you weekly)
Monday – carry out Avanti’s tortellini, salad, and bread and Mike’s mint chocolate cookies
Tuesday – steak, parsley potatoes, green beans, bread, leftover cookies
Wednesday – Mike and I had an impromptu date night at Nina’s. I had a beef tostada and half a chocolate ice cream cone with crunch topping from Tastee Freez
Thursday – Pulled pork burrito bowls (large pork shoulder with salt, 3 limes, and chili powder in the crockpot all day – serve with rice, black beans, pico, guac, cilantro, shredded cheese, lettuce, and sour cream) and homemade peanut buster parfaits (I used this homemade hot fudge recipe and added peanut butter, Spanish peanuts, and whipped cream to vanilla ice cream)
Friday – Pulled pork nachos (leftover pulled pork and toppings on top of our favorite Don Javier chips – we bake for about 7 minutes with just meat, cheese, and beans and then add the other toppings) and Universal’s Volcano Bay Pineapple Upside Down Cake
Saturday – frozen pizza, leftover pineapple cake
Sunday – Pulled pork burrito bowls again — with more leftover pulled pork.
