Pumpkin Muffins
On Sunday afternoon, Anna and I made pumpkin muffins. They aren’t the most beautiful things ever, but they were very good! Bo especially is a huge fan of anything pumpkin and loved these!
Anna made a slight modification to the recipe and cut chunks of cream cheese and stuck one in the middle of each muffin. It added a nice creamy middle! Cream cheese icing would be great on these as well!
Pumpkin Muffins
Ingredients
- 4 eggs
- 1 1/2 cups vegetable oil
- 2 cups sugar
- 3 cups flour
- 1 tsp salt
- 2 tsp baking soda
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 can pumpkin
Notes
Combine the oil, eggs, and pumpkin and mix well. Add the dry ingredients, sugar, flour, salt, baking soda, baking powder and cinnamon and stir until just combined. Fill muffin cups 2/3 of the way full - makes 16/18 muffins. Bake at 400 for 15 minutes.
